Default a simple meal

Today we had a multi-person birthday party; two sons and one granddaughter within one week. And then there is a new granddaughter as of last week. Busy times.

My youngest daughter was in charge of dinner since I was working (yes! yes! yes!) today. She made a simple and good dish: bottom round in the crock pot, with minced garlic and one cup of water, on low for about 8 hours. It shreds when fully cooked and is wonderful on a roll with provolone, tomato, and peppers either sweet or hot. She also made oven-roasted french fries. Spring mix salad. Margarita's for the other grownups, home-made grog for me.

Simple and low key. If you have somewhat more patience than my daughter (she's not used to doing this and got a bit stressed) you could also have some steamed greens like collards or kale, with a viniagrette dressing.
